Pinza is a sweet bread from Trieste that is commonly served at Easter time. For my mini version, I used a color mix of Fimo vanilla, Premo ecru, white, and translucent. Once I’d sculpted the general shapes, I added texture with a toothbrush, needle tool, and crumpled aluminum foil. I then shaded them with soft pastels for a golden-brown baked effect.
After baking, I sealed the loaves with Helmar Crystal Kote Matte spray varnish, so that the pastels wouldn’t rub off. Finally, I added a little matte varnish on the outer part to create the subtle sheen of an egg wash.
For the display, I glued the loaves of pinza onto scalloped circles of gold-covered cardstock. (See my post on torta Sacher for my process of making these.)
The putizza, presnitz, and pinza kept falling through the gaps in the bakery rack, so I ended up gluing all the items in place.
